Catalina and its history!

Catalina Vasquez is our new young producer in Colombia. She has three separate farms called Colombia, Gabriela and Rosa. Note that the Gabriela farm is the name of her grandmother, a beautiful tribute. The three farms are located in Colombia, more precisely in Antioquia. A family story! Catalina Vasquez's family has been in the cafe for 4 generations! Catalina is one of which. Note that Catalina Vasquez is only the second woman after her grandmother to work in the cafe, in this company! The Vasquez family works mainly internally, with its population: Catalina is very close to her father, with whom she collaborates.

Catalina Vasquez's farm was created 180 years ago in the Antioquia region! The plantation, with all the farms included, is made up of 128,000 hectares. You should know that Antioquia is the largest green coffee production area in Colombia! This magnificent region is located in the municipality of Ciudad Bolívar, in the heart of the largest mountains in Colombia. With very varied and changing climates during the periods, the coffees change too! Indeed, the different climates will favor other tastes and flavors on the palate, which makes coffee very special. Today, coffee is called Nectar for its specialty and complexity. Finca Colombia, the farm where our Caturra variety comes from, consists of 52.3 hectares, which represents 1,500 bags of green coffee per year. Harvest time!

Coffee cherries in Colombia are harvested from September to January each year. Catalina has, as every year, 150 seasonal workers, in other words coffee pickers who work on the farm during this period to guarantee a high quality harvest. The coffee picking is done manually: no machine takes part in this manual and rigorous work. Catalina Vasquez and her father ensure that the harvests are carried out qualitatively as in each harvest period.

What does Catalina produce?

Catalina Vasquez will favor several varieties on her territory: She will therefore offer us Caturra, Castillo, Maragogype, Geisha, Pacamara, Java, Bourbon. At Cafés Trottet, the Caturra variety is available thanks to Catalina. This Grand Cru, the vintage of 2017-2018 is freshly picked, cared for and packed by the Catalina team, is picked at more than 1680 meters above sea level. The cherries of the Caturra variety are a bright, exposive red. For the Caturra variety, the harvests vary: it is from October to March. The coffee has received a washed treatment so that our magnificent coffee offers us the aromas of caramel, citrus, flowers and red fruits at the same time. And yes, the washed treatment will favor the acid sides (very good balanced acidity of course!)
