“Notes of chocolate, lemon, hazelnut and peanut”
The Café Entre Sierras association was born in 2018 in the foothills of the Perija mountains in the Valle del Cesar, in the very north of Colombia, where the majestic Andes Cordillera is formed. 16 families grow certified organic coffee on 385 hectares under the shade of native forests and share a vision of associative coffee growing by making their decisions democratically and transparently, whether commercial or financial. Their objectives are to be able to offer a better quality of life to the partners and a more serene future to the next generations.
The Entre Sierras project is:
- an association that provides financial support to new producers who join the adventure
- the creation of a school of "Catadorcitos", small tasters and baristas
The Perija terroir is located in the Valle del Cesar located in the very north of Colombia, where the majestic Andes Cordillera is formed. Plantations have long been abandoned in this area due to numerous armed conflicts. The population was forced to flee and abandon their farms. Back, a few years later with the firm intention of rebuilding, they reinvested in these places belonging to them and relaunched coffee production. The plantations are located at altitudes between 1200 and 1800 m. There are 120 factories producing about 150 tons of organic coffee by 16 producing families. The coffee trees grow in the shade and we are far from the large plantations. In this atypical and isolated area grow varieties arabigo, colombia and costilla.
