Bucaramanga is a Colombian region located in the department of Santander, in the north of Colombia. Bucaramanga is considered the capital region of this department.
In total, the department of Santander has about 50,000 hectares for growing coffee and hosts more than 30,000 producers, which ultimately only represents 5% of the weight harvested. At the heart of this department, coffee is produced at more than 1,200 meters above sea level.
In order to slow the growth and make the coffee complex, the trees are covered under "parasol" fabrics. This technique consists in creating a much more stable environment for the coffee tree with a better controlled temperature.
55% of the producers grouped together in the heart of this department have no more than one hectare of production. The producer families manage the plantation, harvest, delivery to the department for treatment themselves.
The quality of the coffee is supremo. The variety produced is Castillo which will undergo the washed treatment in order to best develop the aromas. Coffees are produced in the Bucaramanga region in the Santander region. In total, producers only have an average of 4.3 hectares.
