The plantation offers different varieties such as Red Caturra, Catuai, Villa Sarchi, Caturra Gold and Maragogype. Mainly, the farm in question grows micro-batch coffees: the main varieties of coffee on their plantation, namely Caturra and then Catuai. The coffee tree plants are always renewed after their first year to guarantee quality coffee production for the next 25 years. The Central Valley also has Nano Lots which are varieties of coffee in small plots that were started in 2015. Cafés Trottet have exclusivity over these coffees because they are great wines of small quantity.

The central valley, 200 years old and magnificent tradition, accompanied by quality and aromas. We have been collaborating for decades with Carole Zbinden, who represents Jardin de Aromas. For years, the plantations have been rich in aromas and product quality without forgetting specialty coffees.

Good to know about the coffee you are about to taste!

These coffee cherries are harvested manually to guarantee a selection of cutting-edge Grands Crus. Without further ado, the cherries are plumped up the same day. The mucilage, or sugar, is partially removed (some of it is kept). The coffee cherries are then rinsed in fresh water and then dried on patios for 5 days then finished by being dried in their Guardiola machine for 25 hours. Note that this machine is supplied with gentle heat by the wood oven of the coffee trees. The coffee is not fermented, to keep the tangy and sweet appearance.

What is caracolis?
These are small grains. Besides, these are the smallest coffee beans that exist. It is actually a whole coffee bean (a ball). Delicious, it is particularly delicious.
