Las Violetas belongs to the producer Daniel Alejandro Cardona 26 years old and his wife Lina Isabel Castillon 21 years old. And this young couple took control of the plantation for 3 years after many years of abandonment. The area was in conflict and parents had to abandon their farm in order to stay safe.
The farm was dedicated to coffee production, and despite the remains of the old plantation and its infrastructure, the young couple preferred to start from scratch. Indeed, the long years of neglect of the plantation caused damage and it was better to resume as if there had never been a coffee plantation in the past. With the help of the Young Producers Association, (Jovcoffee), they were able to get support to restart this new adventure with the planting of new coffee trees.
Although they managed to plant many trees (around 25,000), the problems encountered during the first harvest were related to the lack of adequate infrastructure for coffee processing. That's why, they initiate experimental work to create different processes with a small infrastructure to make a differentiating coffee, a specialty coffee. With the help of Jovcoffee and their neighbors, they managed to produce Honey and Nature microlots this year.
For the HONEY process, the ripe cherries are harvested for fermenting for 18h and the next day they begin to lightly pulp the coffee using as little water as possible. Then they put it to dry for 15 days with as little light as possible.
