El Salitre is an exceptional selection of old coffee varieties of Pacas. They are 70 to 90 years old. This is very special since coffee trees usually produce until they are 25 years old. Located on the highest plots of the farm, at an altitude of 1300m, the coffee trees benefit from a nutrient-rich subsoil, an annual temperature of 20 ° C and a regular rainfall guaranteeing a constant development of cherries. . The harvest is done by hand, which guarantees a high quality of the coffee. This manual harvest requires up to 5 tree crossings. The cherries are then processed by the cooperative Cuzcachapa.
